Paul Ives is a live-fire chef and roving instructor whose Big Green Egg cookery classes are among the best in the country. “My goal in every class is to help people not only learn new recipes and techniques but also feel confident and inspired to create incredible food at home,” he says. “There’s nothing quite like seeing someone’s face light up when they realise what’s possible on the EGG.”
Paul first cooked on a Big Green Egg about 10 years ago while catering at an event in Dorset. “I’d seen kamado-style barbecues before, but I’d never had the chance to use one myself. What struck me straight away was how effortlessly the EGG held its heat – steady, controlled and incredibly responsive. It felt completely different to anything I’d cooked on before.”

A tip from the top
As a skilled Big Green Egg instructor, Paul has a wealth of cooking tips to offer. But what does he think is the most important piece of advice for a new owner to follow? “Trust the process,” he says. “You have to put your trust in the Big Green Egg. Don’t keep lifting the lid or adjusting the vents every few minutes. I see that all the time in classes! Once you learn to let the EGG do its thing, your food improves dramatically and so does your confidence.”
